2 cups broad beans, Verde Valle, cleaned

7 cups water

3 tablespoons olive oil

1 onion, finely chopped

2 garlic cloves

250g Spanish style chorizo, sliced

1 Serrano ham bone

2 bay leaves

1 tablespoon paprika

1 red chili

Salt and pepper to taste

PREPARATION

PLACE broad beans in a pot and cover with 6 cups of water. COOK over medium heat until broad beans begin to soften, being careful to not overcook and beat them. HEAT olive oil in a saucepan and fry onion until it looks transparent, add garlic and chorizo, fry for 2 minutes more. ADD cooked broad beans, remaining cup of water, ham bone, bay leaf, paprika, chili, salt and pepper. COOK over medium heat, stirring occasionally until beans are well cooked, but not overcooked. Season with more salt if necessary. SERVE immediately.
